Easy cheesey broccoli soup | comfort food

I fear spring will never happen. It’s just going to be winter forever. It’s mid April and the snow just keeps coming back. It started snowing, on Friday. And still hasn’t stopped. I’ve been stuck inside all weekend. It’s ridiculous, the snow should be melting not still coming. Also it’s not even snow, it’s like wet snow almost ice so the roads are nothing but ice. So many places are shut down because of it.

Anyway I’m not real big on comfort food. I mean I rely on sugar to cope with my anxiety but that’s it. But occasionally it’s nice to find a good comfort food. Soup is one of my favorites. If it’s particularly cold, I’m feeling sick, or the weather is just gross, I want soup.

The first time I tried making a cheddar broccoli soup it was so much work and it had a weird texture. Then I found an easier way…

You will need

  • 1 can of Cream of Chicken soup
  • 1 cup of carrots (more or less to taste)
  • 1 cup of broccoli (more or less to taste)
  • 1 cup of shredded cheddar cheese
  • a dash of nutmeg

To start I steamed the broccoli, while that was going I cut up the carrots. I bought fresh carrots, peeled them then cut them with a veggie spiralizer (this thing) then chopped them up a bit more.

Next prepare the soup according to the can. I did one can of soup with one can of milk, then when that was mixed well I added the carrots and broccoli. I let that cook for a bit then added the cheese and nutmeg.  I suggest using pre-shredded cheese as it melts and blends in better. Also I get that I could buy a can of creamy broccoli soup but this is just so much better.

This soup is so good, if your weather is as bad as mine you should definitely try make inferences this. Let me know if you do, and what you think.
