In the beginning of this year I had made the decision to go back to work at the daycare I’d worked at before working at home. One of the best changes that happened was that I’ve been baking a lot of cookies.
One of the easiest cookies that I have made is peanut butter cookies. I can’t remember where I this recipe originally came from, but I’ve been using it for years.
You will need:
- 1 cup of peanut butter
- 1 cup of sugar
- 1 egg
Pre-heat your oven to 350. Combine all three ingredients in a medium size bowl. I find that it works best when you use a Wooden spoon instead of a mixer. Once your ingredients are fully mixed together take about a tablespoon of the dough and roll it into a ball then on either a greased cookie tin or one lined with parchment paper flatten a bit it using a fork. Bake for 10-15 minutes
My mom’s favorite version of this is the sandwich cookies. After making the cookie dough instead of making individual cookies I put all of the cookie dough on the tin and flattened it out by pressing another tin on top. You can use a rolling pin but I couldn’t find mine. This one because it’s all as one had to bake a lot longer I think it was for 30 minutes. While the cookie was cooling I mixed up some peanut butter frosting. Then using a cookie cutter I cut the small shapes out of the dough and frosted half of the cookies then covered it with an unfrosted cookie. When making these you might want to double the recipe.
For a bright and colorful mix you can fold in a few handfuls of M&M to your cookie dough. The kids really seem to like these ones.
Another way I makes these is to add some mini Reece’s peanutbutter cups inside. I chopped a handful of these in half before mixing them into the cookie dough
